One of my favorite #cubanrecipes that I learned from my mother is Picadillo. So easy to make and everyone loves it. #Cubancooking
2 cups onion, diced…
2 cups green pepper, seeded and finely chopped
2 tablespoons olive oil for sautéing
4 cloves garlic, minced
1/2 cup of vino seco (edmundo golden cooking wine)
2 8oz cans of tomatoe sauce
2 pounds ground beef
1 teaspoon cumin, ground
1 teaspoon oregano
1/2 cup green olives, chopped
1/3 cup raisins (optional)
1/2 cup of the Green olive juice brine.
Sauté onion, green pepper and Garlic with olive oil in a large pan. Sauté for a few minutes, until the onion is clear and soft then add the ground beef and olives. Sauté until the gound beff is completely cooked and drain some off the excess fat. Add the tomatoe sauce, Vino seco, Cumin, oregano and green olive juice (if using raisin add at this time). Reduce your heat to low, cover and simmer for 20 minutes. I serve this over white rice with Sweet Fried Plantains (Plátanos Maduros). Easily serves 6 to 8 people.
